Springfield buffet on risk control plan after 3rd food safety citation

A Springfield buffet was put on a risk control plan for repeated cold-holding violations, according to a Sept. 19 Springfield-Greene County Health Department food inspection report, while another is handling issues with mouse droppings in its utensil bins and on its storage shelves, per a separate Sept. 19 report.

Risk control plans are put in place by inspectors after an establishment has three of the same priority violations in a row. Amazin’ Buffet, 2501 S. Campbell Ave., is on a cold-holding risk control plan due to repeatedly leaving potentially hazardous foods at unsafe temperatures, according to the Sept. 19 report. The violation that precipitated the need for a risk control was a food inspector observing raw shrimp on the countertop that measured 68 degrees Fahrenheit.

In a risk control plan, an inspector will show where the violation was cited previously, and then identify the risk associated with the violation, what needs to happen to keep food safe, and how an establishment can accomplish that goal.

Stusquatch’s Rockstar BBQ, 2463 W. Sunshine St., received one priority violation and one non-priority violation for mouse droppings, according to the Sept. 19 report. An inspector observed mouse droppings in a box holding utensils that will be used with food, which is a priority violation corrected by washing, rinsing and sanitizing both the utensils and the box. The report also states there were mouse droppings on storage shelves.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross-contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often “than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda,” according to the Springfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Here are food inspections from the past week:

Amazin’ Buffet, 2501 S. Campbell Ave., Springfield. Sept. 19 re-inspection – Result: risk control. This is the third repeat violation for cold holding; establishment will be placed on risk control plan for cold holding. Two priority violations: Observed raw shrimp on counter top at 68 degrees Fahrenheit, which is a third repeat violation, education provided; observed raw chicken stored above raw frog legs inside meat walk-in cooler, which was corrected on site and education provided. One non-priority violation: Observed fly strips placed in hallway, door entry way and main food prep area over locations where food prep and transport takes place, which was corrected on site and education provided.

Big Easy Grill, 3641 E. Sunshine St., Springfield. Sept. 24 routine inspection – Result: active. No priority violations. Two non-priority violations: Observed smoked sausage, andouille sausage and sliced ham being thawed at room temperature, which was corrected on site and education given; observed no quat sanitizer test strips available for use, education given.

Bingham Elementary, 2126 E. Cherry St., Springfield. Sept. 25 routine inspection – Result: active. One priority violation: Observed thumb-press dish scoop container had food debris on inside of scoop, which was corrected on site by putting scoops in dish pit and washing them, education provided. One non-priority violation: Observed floor in dry storage area not clean, education provided.

Black Lab Galloway LLC, 3541 S. Lone Pine Ave., Springfield. Sept. 19 routine inspection – Result: active. No violations noted.

One priority violation: Observed two pans of chicken wings and one pan of rice cooked the day prior that were not date marked, which was corrected on site and education given. Captain D’s No. 3545, 2964 S. National Ave., Springfield. Sept. 24 routine inspection – Result: active. One priority violation: Observed coleslaw on cook line at 48 degrees, which was corrected by voluntarily discarding coleslaw and putting new coleslaw on line with ice. One non-priority violation: Observed cabinets under soda fountain machines are not clean, which is a repeat violation.

Casa Bella, 4610 S. Campbell Ave., Springfield. Sept. 23 routine inspection – Result: active. Two priority violations: Observed raw whole cuts of beef stored in box with tubes of raw ground beef, raw chorizo stored above whole raw cuts of salmon, which is a repeat violation, was corrected on site and education provided; observed cooked whole chunks of beef at 73 degrees on counter after cooling about 5 hours, which was corrected on site by discarding beef.
